Fudge Base
- 600 g (3 ¼ cups + 1 tbsp) white chocolate
- 397 g (14 oz) condensed milk
Strawberry Swirl
- 23 g (about 2 tbsp) strawberry jelly (powdered)
- Freeze-dried strawberries (optional, for garnish)
- Prepare the Tin: Line an 8″ square baking tin with baking parchment, ensuring the paper extends over the sides for easy removal later. Set aside.
- Melt the White Chocolate: Place the white chocolate in a microwave-safe bowl and heat in 10-20 second bursts, stirring well between each to prevent burning. Continue until melted and smooth.
- Mix in Condensed Milk: Add the condensed milk to the melted white chocolate and stir thoroughly to combine into a smooth, unified fudge base.
- Layer the Fudge: Pour about two-thirds of the fudge mixture into the prepared tin and spread it out evenly with a spatula.
- Create Strawberry Swirl: In the remaining fudge mixture, fold in the strawberry jelly powder thoroughly. Spoon dollops of this strawberry mixture over the white chocolate layer in the tin.
- Swirl the Mixtures: Using a knife or skewer, gently swirl the strawberry mixture into the white chocolate fudge to create an attractive marbled effect.
- Add Freeze-Dried Strawberries: Sprinkle freeze-dried strawberry pieces on top of the fudge and gently press them in slightly to help them adhere.
- Chill to Set: Refrigerate the fudge for several hours or overnight until firm and set.
- Slice and Store: Once set, lift the fudge out using the parchment overhang, cut into pieces, and store in an airtight container at room temperature or in the fridge for longer freshness.
Notes
- Make sure to stir chocolate frequently while microwaving to avoid burning.
- The strawberry jelly powder gives a vibrant flavor and color, but adjust quantity to taste.
- Freeze-dried strawberries add a nice decorative touch and extra strawberry flavor but can be omitted if unavailable.
- Store fudge in a cool, dry place away from direct sunlight to maintain texture and flavor.
- Use a sharp knife warmed in hot water for cleaner fudge slices.
