Ingredients

Scale

Puff Pastry

  • 400g Puff pastry
  • Egg wash (1 beaten egg mixed with 1 tablespoon water)

Filling

  • 100g Fresh strawberries, sliced
  • 100ml Whipping cream, sweetened with 2 tablespoons icing sugar
  • 8 teaspoons Strawberry jam
  • 1 tablespoon White cocoa syrup

Toppings

  • About 2 tablespoons Icing sugar, for sprinkling
  • Melted chocolate, for drizzling

Instructions

  1. Cut the puff pastry: Using either the whole 400g for heart shapes or half for rectangles, cut the puff pastry into desired shapes. Save any off cuts to use later as pie bases or other pastries.
  2. Apply egg wash: Brush the tops of the cut pastry shapes with egg wash to ensure a golden, glossy finish when baked.
  3. Bake the pastry: Place the pastry shapes on a baking sheet lined with parchment paper and bake in a preheated oven at 200°C (390°F) for about 12-15 minutes, or until puffed and golden brown. Remove and let cool completely.
  4. Prepare the filling: Whip the cream with icing sugar until soft peaks form, then gently fold in the white cocoa syrup to infuse a subtle cocoa flavor.
  5. Assemble the cream puffs: Carefully slice the cooled pastries open horizontally. Spoon about 1 teaspoon of strawberry jam inside the bottom halves.
  6. Add whipped cream and fruit: Pipe or spoon the sweetened whipped cream over the jam, then place fresh sliced strawberries on top of the cream.
  7. Close and garnish: Place the top halves of the pastries over the filling, dust with icing sugar, and drizzle melted chocolate artistically over the tops.
  8. Serve and enjoy: Serve immediately to enjoy the crispiness of the pastry with the fresh and creamy filling.

Notes

  • For best results, ensure the puff pastry is cold before baking to maximize puffiness.
  • You can substitute white cocoa syrup with vanilla extract if unavailable, though the flavor will differ slightly.
  • Make sure the cream is whipped to soft peaks to achieve the perfect light and airy filling.
  • Strawberries should be fresh and firm for the best texture and flavor balance.
  • Store any assembled cream puffs in the refrigerator and consume within 24 hours for optimal freshness.
  • To avoid soggy pastry, add the jam and cream just before serving.
