Instructions

  1. Preheat Oven: Preheat your oven to 475°F (245°C). Place a pizza stone on the center rack if you have one, to ensure a crisp crust.
  2. Prepare Curry Sauce: In a small bowl, thoroughly mix the coconut milk and yellow Thai curry paste until you have a smooth, creamy sauce.
  3. Assemble Pizza: Roll out your pizza dough on a floured baking sheet or on parchment paper if using a pizza stone. Spread the curry sauce evenly over the dough, then top with the sliced red bell peppers, carrot ribbons, and red onion slices. Finally, sprinkle the shredded mozzarella evenly over the top.
  4. Bake Pizza: Transfer the pizza onto the heated stone or place the baking sheet in the oven. Bake for 9 to 11 minutes until the crust is lightly browned and the cheese is melted and golden.
