Instructions

  1. Rinse the feta: Break the block of feta into about 8 pieces and place in a fine mesh strainer. Rinse briefly under cold water then drain well. This step is optional but helps reduce the saltiness of the cheese.
  2. Prepare the hot honey: Combine the honey and red pepper flakes in a small saucepan. Warm over medium heat until the honey starts to simmer. Remove from heat and allow to cool while preparing the dip.
  3. Whip the feta: Transfer the drained feta pieces to the bowl of a food processor. Add the fresh lemon juice and whole milk or Greek yogurt. Process until the mixture resembles ricotta or cottage cheese.
  4. Incorporate the olive oil: With the food processor running, slowly drizzle in the olive oil. Scrape the bottom of the bowl as needed and process again until the mixture is smooth and creamy, with a consistency similar to Greek yogurt.
  5. Assemble and serve: Transfer the whipped feta dip to a serving bowl, create a swirl with a spoon, and drizzle the cooled hot honey over the top. Garnish with finely chopped pistachios and serve immediately alongside toasted baguette slices.
