Dip
- 8 ounces cow’s milk feta cheese
- 1 teaspoon fresh lemon juice
- 2 tablespoons whole milk or plain Greek yogurt
- 2 tablespoons olive oil
Hot Honey
- ¼ cup honey
- 1 teaspoon red pepper flakes
Garnish and Serving
- ⅓ cup chopped pistachios
- Toasted baguette slices
- Rinse the feta: Break the block of feta into about 8 pieces and place in a fine mesh strainer. Rinse briefly under cold water then drain well. This step is optional but helps reduce the saltiness of the cheese.
- Prepare the hot honey: Combine the honey and red pepper flakes in a small saucepan. Warm over medium heat until the honey starts to simmer. Remove from heat and allow to cool while preparing the dip.
- Whip the feta: Transfer the drained feta pieces to the bowl of a food processor. Add the fresh lemon juice and whole milk or Greek yogurt. Process until the mixture resembles ricotta or cottage cheese.
- Incorporate the olive oil: With the food processor running, slowly drizzle in the olive oil. Scrape the bottom of the bowl as needed and process again until the mixture is smooth and creamy, with a consistency similar to Greek yogurt.
- Assemble and serve: Transfer the whipped feta dip to a serving bowl, create a swirl with a spoon, and drizzle the cooled hot honey over the top. Garnish with finely chopped pistachios and serve immediately alongside toasted baguette slices.
Notes
- Rinsing the feta reduces saltiness but can be skipped if a more intense flavor is preferred.
- Adjust the amount of red pepper flakes in the honey to control the heat level.
- For a creamier texture, use whole milk or Greek yogurt as specified; skim milk will yield a thinner dip.
- This dip is best served fresh but can be stored covered in the refrigerator for up to 2 days.
- Use quality extra virgin olive oil for best flavor.
- Replace pistachios with toasted walnuts or almonds if preferred.
