Ingredients

Scale

Sauce Base

  • 1 cup heavy cream (240 ml)
  • 2 tablespoons olive oil
  • 1 tablespoon all-purpose flour

Flavorings

  • 4 cloves garlic (minced)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)

Cheese

  • 1/2 cup grated Parmesan cheese (50 g)

Instructions

  1. Heat the olive oil: In a medium saucepan, warm the olive oil over medium heat to create a perfect base for sautéing.
  2. Sauté the garlic: Add the minced garlic to the hot oil and cook for 1-2 minutes until fragrant, making sure it does not brown to avoid bitterness.
  3. Create the roux: Sprinkle the all-purpose flour over the garlic and stir continuously to form a roux, cooking for another minute to remove the raw flour taste.
  4. Add the heavy cream: Slowly whisk in the heavy cream to the roux, making sure to whisk continuously to avoid lumps and achieve a smooth sauce.
  5. Season the sauce: Stir in salt, black pepper, dried oregano, dried basil, and optional red pepper flakes for a balanced and aromatic flavor profile.
  6. Thicken the sauce: Simmer the sauce over medium heat while whisking continuously until it thickens, about 5-7 minutes, reaching a creamy consistency ideal for spreading.
  7. Add Parmesan cheese: Remove the saucepan from heat and stir in the grated Parmesan cheese until fully melted and the sauce is smooth and cheesy.
  8. Cool before use: Allow the sauce to cool slightly so it thickens a bit more, then spread it evenly on your pizza dough as an irresistible base.

Notes

  • This sauce can be stored in an airtight container in the refrigerator for up to 3 days.
  • If the sauce becomes too thick after refrigeration, gently reheat and whisk in a small amount of milk or cream to restore consistency.
  • For a spicier kick, increase the red pepper flakes to taste.
  • This sauce works wonderfully not just for pizza but also as a dip for breadsticks or a creamy base for pasta dishes.
